For those of you who don’t like thick, chunky salsa this could be the salsa for you. This recipe is fairly mild but feel free to spice it up! It’s not just for chips and it goes quickly.
Ingredients:
- 4 Tomatoes (whatever variety you prefer – I love more acidic varieties)
- 1/2 Onion (whatever variety you prefer)
- Garlic Clove
- 1 Jalapeño – seeds removed
- Juice of 1 lime (Sometimes my mother uses Lemon – use what you like)
- Cilantro – to taste
- Cumin – to taste (I usually use at least a teaspoon)
- Salt – to taste
In a food processor (I’ve also used blenders) combine onion, garlic, jalapeno. lime and cilantro (If you prefer less cilantro you can add chopped leaves later). Once these are finely processed add tomatoes.
When everything is well blended add cumin and salt, tasting as you go. Chill and enjoy!
